Chef de Partie

A premium beachside kitchen on Sri Lanka's south coast

LKR 90,000 – 120,000 per month • depending on experience

We are looking for a Chef de Partie to own a station in a high-volume, premium beachside kitchen. You will keep flavour, portioning and plating consistent on every ticket, hold food safety and hygiene to a strict standard, and stay composed when the pass is busy.

ON YOUR STATION

  • Consistent flavour, correct portions and strong plate presentation on every order.
  • HACCP procedures, clean-as-you-go discipline and daily temperature recording.
  • Safe operation and monitoring of station tools, ovens and appliances.
  • Strict FIFO rotation, efficient use of raw goods, tight food cost control.
  • Immaculate uniform standard and reliable timekeeping, every shift.
  • Support for Commis chefs, cross-station teamwork and close following of kitchen direction.

WHAT WE’RE LOOKING FOR

  • 2–3 years as a Demi Chef de Partie or CDP in a high-output resort, bistro or beach café.
  • Strong skills in western menus, seafood handling or wood-fired deck operation.
  • Culinary degree or NVQ preferred — proven kitchen ability weighs heavily.
  • Emotional control under pressure, confident verbal communication and a solution-driven attitude.

A DAY ON THE LINE

MORNING – PREP & DAY LAUNCH

  • Attend the daily briefing on specials and covers
  • Check stock and submit requisitions early
  • Set up mise en place before service
  • Run breakfast and lunch through the midday rush
  • Record temperatures and opening safety checks
  • Keep the station inspection-ready

EVENING – DINNER & PEAK SERVICE

  • Set the line for upscale dinner service
  • Track components, replenish ahead of peaks
  • Support other stations under heavy tickets
  • Complete the scheduled deep-cleaning tasks
  • Cool, label, wrap and store food correctly
  • Hand over a full brief to the next shift

CLOSING – LOCKDOWN & COMPLIANCE

  • Deep clean and sanitise counters and line
  • Shut down gas, hot plates and non-essential equipment
  • Log the day’s wastage on the templates
  • Secure walk-ins, dry store and stock bays
  • Report maintenance issues to management
