Sous Chef
The Job
- Supervise daily kitchen operations and ensure the timely preparation and quality of food.
- Maintain food quality, presentation, portion control and freshness of ingredients.
- Lead, train and motivate junior kitchen staff while assigning duties and maintaining teamwork.
- Maintain discipline and team work in kitchen staff.
- Ensure proper kitchen hygiene, food safety standards and HACCP compliance.
- Manage kitchen inventory, stock control, purchasing and food cost while minimising wastage.
- Assist the Head Chef in menu development and introducing new dishes.
- Coordinate with service staff regarding menu availability and out-of-stock items.
- Ensure proper maintenance and cleanliness of kitchen equipment and facilities.
The Profile
- Minimum 3-5 years of experience as a Sous Chef / Senior CDP in hotel/restaurant.
- Diploma in Culinary / Hotel Management preferred.
- Knowledge of Sri Lankan, Chinese, Western cuisine.
- Strong leadership and ability to handle pressure during service.
- Knowledge of food costing and portion control.
- Good communication skills.
