Role Overview
As Chef de Partie – Pastry, you will be responsible for preparing and presenting an exceptional selection of pastries, desserts, breads, cakes, and other baked creations that enhance the guest dining experience. You will oversee the daily pastry operation, maintain the highest standards of quality, hygiene, and presentation, support the development of innovative menu offerings, and guide junior team members to ensure consistency and excellence across all pastry production.
Key Responsibilities
- Prepare and present a wide range of high-quality pastries, desserts, breads, cakes, and other baked products in accordance with the resort's standards and recipes.
- Ensure consistency in taste, presentation, portioning, and quality across all pastry offerings.
- Plan and organise daily pastry production to meet operational requirements and guest expectations.
- Maintain the highest standards of food hygiene, cleanliness, and sanitation in compliance with HACCP and food safety regulations.
- Monitor stock levels, control food costs, and minimise wastage through effective inventory management.
- Inspect the quality and freshness of ingredients before use and ensure proper storage practices.
- Assist in developing seasonal menus, dessert specials, and innovative pastry creations.
- Supervise, train, and motivate junior kitchen team members to support their development and maintain high performance standards.
- Ensure all pastry equipment is operated safely and maintained in good working condition.
- Collaborate closely with the Executive Chef and Sous Chef to achieve departmental objectives and deliver exceptional guest experiences.
Qualifications
- Professional qualification in culinary arts, pastry, bakery, or a related field.
- Minimum 3-5 years of experience in pastry production, with at least 2 years in a Chef de Partie or similar supervisory role, preferably within a luxury hotel or resort.
- Strong knowledge of pastry and bakery production, chocolate work, plated desserts, and contemporary presentation techniques.
- SOUND UNDERSTANDING OF HACCP, FOOD SAFETY STANDARDS, AND KITCHEN HYGIENE PRACTICES.
- Excellent organisational and time management skills with the ability to perform effectively in a fast-paced environment.
- Creative mindset with a passion for innovation and continuous improvement.
- Strong leadership, communication, and team-building skills.
- Positive attitude with a strong commitment to quality, consistency, and guest satisfaction.
- Previous experience in an international luxury hospitality environment will be an added advantage.
