Job Description
Job Role:
- Supervise and manage the hot kitchen team responsible for cooking fillings, sauces, and other hot-prep items for bakery or food products.
- Ensure all recipes are followed accurately and cooking parameters (time, temperature, seasoning) are strictly maintained.
- Coordinate with the Production Executive to align output with daily production targets.
- Guide and train Commis Chefs on proper preparation, handling, and cooking techniques.
- Monitor batch yields, reduce wastage, and maintain consistency in taste, texture, and appearance.
- Ensure hygiene, food safety, and allergen control measures are followed as per HACCP/GMP standards.
- Oversee workstation cleanliness, equipment readiness, and timely mise en place.
- Check availability of raw materials and communicate shortages in advance.
- Maintain logs for temperature checks, batch codes, and cleaning schedules.
- Any other tasks as requested by the Management.
Candidate Requirements:
- Anyone passionate about Sri Lanka.
- Culinary diploma, NVQ certification, or equivalent training preferred.
- Minimum 3–5 years of experience in a commercial kitchen, central kitchen, or industrial food production setting, with experience in hot food preparation.
- Strong skills in cooking savory items, sauces, meat/vegetable fillings, and handling large-scale batches.
- Knowledge of food safety and hygiene standards (HACCP/GMP/ISO).
- Ability to manage a team and coordinate with other kitchen sections.
- Should be able to work from our bakery located in Colombo 02.
