Job Description

Job Role:

  • Supervise and manage the hot kitchen team responsible for cooking fillings, sauces, and other hot-prep items for bakery or food products.
  • Ensure all recipes are followed accurately and cooking parameters (time, temperature, seasoning) are strictly maintained.
  • Coordinate with the Production Executive to align output with daily production targets.
  • Guide and train Commis Chefs on proper preparation, handling, and cooking techniques.
  • Monitor batch yields, reduce wastage, and maintain consistency in taste, texture, and appearance.
  • Ensure hygiene, food safety, and allergen control measures are followed as per HACCP/GMP standards.
  • Oversee workstation cleanliness, equipment readiness, and timely mise en place.
  • Check availability of raw materials and communicate shortages in advance.
  • Maintain logs for temperature checks, batch codes, and cleaning schedules.
  • Any other tasks as requested by the Management.

Candidate Requirements:

  • Anyone passionate about Sri Lanka.
  • Culinary diploma, NVQ certification, or equivalent training preferred.
  • Minimum 3–5 years of experience in a commercial kitchen, central kitchen, or industrial food production setting, with experience in hot food preparation.
  • Strong skills in cooking savory items, sauces, meat/vegetable fillings, and handling large-scale batches.
  • Knowledge of food safety and hygiene standards (HACCP/GMP/ISO).
  • Ability to manage a team and coordinate with other kitchen sections.
  • Should be able to work from our bakery located in Colombo 02.
