Senior Chef de Partie (Chef In-Charge)

Uga Riva is a high-end luxury boutique villa nestled in a lush five-acre plantation in Negombo, the 180-year-old traditional manor house is cherished by travellers seeking an indulgent sanctuary. Owned and managed by Uga which is a luxury boutique hotel chain with an exquisite collection of hotels. The Uga Experience unites the natural magic of Sri Lanka with the warmest hospitality of her people.

As we expand and grow our operations, we are currently looking to recruit a Senior Chef de Partie (Chef In-Charge) for our new & exciting luxury boutique villa in Negombo. The position provides a key support role in setting new standards of culinary and operational excellence and achieving the next stage of our continued evolution.

Responsibilities

  • All kitchen functions including food purchasing, preparation, and maintenance of quality standards, training of employees, plate presentation, portioning, cost control, and cleanliness.
  • Ensuring that all food and products are consistently prepared and served according to the hotel's recipes, portioning, cooking, and serving standards to ensure the highest levels of guest satisfaction.
  • Monitoring inventory levels, minimizing waste, and controlling food costs.
  • Creating, innovating, and developing new and unique culinary creations that complement the concept of the hotel.
  • Playing an active part in the management team of the hotel, through operational management and contribution at key meetings.
  • Recruiting, training, and supervising a team of talented chefs and kitchen staff while providing guidance and mentoring to foster professional growth and maintain a positive work environment.
  • Maintaining quality standards on Good Manufacturing practice and good hygiene practices.

Requirements

  • A minimum of 3 years of proven experience as a Chef de Partie or similar role in a luxury resort or luxury boutique hotel.

A qualification in the Fine Culinary Arts from a recognized institute.

Knowledge of various cuisines, cooking techniques, and flavor profiles.

Knowledge of costing, menu planning, and menu creation.

Excellent communication and interpersonal skills to foster effective teamwork and collaboration.
