SOUS CHEF – THE BUNGALOW GALLE FORT

Location: Galle Fort, Sri Lanka

Contract: Full-time

The Bungalow Galle Fort operates as a stand-alone, high-demand restaurant with a clear focus on execution, consistency, and service quality. We’re known for doing things properly—from prep to plate—and we maintain strong systems to support that standard.

We’re now looking for a disciplined, capable Sous Chef to work closely with our Group Executive Chef in leading the kitchen. This is not just a cooking role—it’s a hands-on leadership position in a fast-moving, independently managed kitchen that values structure, communication, and steady control during service.

You’re someone who leads from the front—calm under pressure, consistent in your work, and professional in your approach.

  • Know how to manage people, delegate tasks efficiently, and maintain smooth service in a dynamic kitchen.
  • Respect structure and teamwork—you’ll work directly under our Group Executive Chef and be responsible for implementing clear kitchen standards.
  • Are confident working across both Western and Asian menus, or quick to adapt.
  • Take pride in cleanliness, discipline, and punctuality.
  • Understand that reliability, not talk, is what earns long-term respect in a professional kitchen.

Your Key Responsibilities

  • Oversee daily kitchen operations and maintain a steady, organized flow of service.
  • Ensure all dishes meet presentation and taste standards—without compromise.
  • Mentor and train junior team members to help them grow and maintain consistency.
  • Uphold food safety, prep discipline, and hygiene protocols at all times.
  • Be an active part of service—especially during peak periods.
  • Work in sync with both BOH and FOH to support a seamless guest experience.
