Chef De Partie - Indian Cuisine
We are in search for energetic individuals for our reputed client company (five star hotel) based in Colombo.
Responsibilities:
- Manage and oversee the daily operations of the Indian cuisine section, including preparation, cooking, and plating of dishes.
- Ensure the consistency, quality, and authenticity of Indian dishes across all food outlets.
- Supervise and mentor junior kitchen staff (Commis Chefs, Kitchen Assistants) within the section.
- Collaborate with the Sous Chef and Executive Chef to develop and innovate menus, incorporating seasonal and regional Indian specialties.
- Maintain inventory control, stock rotation, and minimize food wastage.
- Enforce strict adherence to hygiene, food safety, and sanitation standards in compliance with HACCP guidelines.
- Monitor and control portion sizes and cost to maintain profitability.
- Participate actively during service hours, ensuring timely and efficient delivery of food.
- Assist in training and development programs for kitchen staff.
- Contribute to the overall smooth functioning of the kitchen team.
Qualifications:
- Culinary degree or diploma, preferably in Indian Cuisine or Culinary Arts.
- Minimum 4 – 5 years’ experience as Chef de Partie or similar role in a 5-star hotel or luxury restaurant specializing in Indian cuisine is mandatory.
- Strong knowledge of Indian spices, regional cooking styles, and traditional recipes.
- Excellent leadership, organizational, and communication skills.
- Ability to work efficiently under pressure in a fast-paced environment.
- Commitment to maintaining high standards of food safety and kitchen cleanliness.
- Creativity and passion for Indian gastronomy.
