EXECUTIVE – PRODUCTION (BAKERY)
We are a leading producer in bakery products serving across multiple channels from modern trade to direct to consumer with a purpose of giving Sri Lanka’s affordable food. To oversee daily bakery production operations, including night shift activities, ensuring consistent product quality, adherence to production plans, cost efficiency, and optimal use of staff and resources, in alignment with food safety and operational standards.
Job Role:
- Execute and monitor production schedules across all assigned shifts, including night operations.
- Manage bakery processes such as mixing, proofing, baking, cooling, and packing in a timely and efficient manner.
- Coordinate seamlessly between production lines and kitchen areas (if applicable) to ensure workflow continuity.
- Quickly identify and resolve operational issues during both day and night shifts.
- Ensure that all finished products meet defined quality and food safety standards.
- Collaborate with QA/QC teams to conduct in-process checks and ensure compliance with HACCP, GMP, and FSSC/ISO standards.
- Enforce hygiene protocols and cleanliness across all shifts.
- Monitor material usage, control wastage, and maintain targeted production yields.
- Support continuous improvement initiatives to reduce downtime and enhance productivity.
- Assist in optimizing processes and reducing cost per unit without compromising quality.
- Supervise and guide the production team, including supervisors, assistants, or kitchen staff such as CDPs and Commis Chefs.
- Ensure effective shift handovers and team communication, especially during night operations.
- Plan staffing needs for each shift and provide coaching and training to improve skills and efficiency.
- Maintain a positive and safe working environment across all teams and shifts.
- Be available to oversee weekend shifts or alternate shift schedules to support 7-day operations.
- Maintain accurate and timely records for production output, downtime, yield, and any shift-specific observations.
- Track and report performance against KPIs (e.g. OEE, efficiency, wastage, yield).
- Assist in preparing for audits and ensure shift compliance with documentation standards.
- Any other tasks as requested by the Management.
Candidate Requirements:
- Anyone passionate about Sri Lanka.
- Diploma or Degree in Food Technology, Manufacturing, Engineering, or related field.
- 2-4 years of experience in food manufacturing, preferably bakery or FMCG.
- Exposure to shift-based or night shift operations is preferred.
- Prior experience in managing production teams in a fast-paced environment.
- Sound knowledge of industrial bakery processes and equipment.
- Understanding of food safety and quality standards.
- Strong leadership and communication skills.
- Ability to manage shift schedules, staff productivity, and troubleshoot process issues in real time.
- Should be able to work from our bakery located in Colombo 02.
