Waters Edge, a benchmark of Sri Lankan hospitality, seeking a highly organized and experienced Chief Steward to lead and manage the Kitchen Stewarding Department, ensuring the highest standards of cleanliness, hygiene, sanitation, and operational efficiency across all Food & Beverage back-of-house areas. The role is responsible for supervising and developing stewarding staff, managing cleaning operations, maintaining inventory and par stock levels, monitoring equipment and breakages, controlling departmental costs, and ensuring the availability and proper handling of stewarding supplies and equipment in line with hotel standards and operational requirements.

Responsibilities

  • Oversee and supervise all stewarding operations, including staff performance, facilities, daily activities, and cost control to ensure smooth and efficient department functioning.
  • Ensure the highest standards of sanitation, cleanliness, and hygiene are maintained across all Food & Beverage back-of-house areas, including equipment, utensils, containers, and food contact surfaces, in compliance with hotel policies and health regulations.
  • Manage and optimize cleaning operations by guiding stewarding staff, improving efficiency, and ensuring proper usage, handling, and storage of cleaning equipment and chemical supplies.
  • Coordinate inventory management by establishing and maintaining minimum and maximum par stock levels, approving requisitions, and ensuring proper control and tracking of stewarding equipment (including CCG) in line with company procedures.
  • Support daily banquet and F&B operations by working closely with kitchen and service teams to ensure operational readiness and seamless service delivery.
  • Monitor breakages, equipment usage, and inventory regularly, ensuring accurate reporting and adherence to hotel policies and procedures.
  • Lead, train, and develop stewarding staff by implementing monthly training plans, conducting regular training sessions, and participating in departmental development programs to enhance overall performance and standards.
  • Collaborate with the Chef and F&B management to plan and procure necessary equipment and supplies to meet operational requirements effectively.
  • Implement and maintain Stewarding Standard Operating Procedures (SOPs), ensuring consistency, efficiency, and continuous improvement in all stewarding functions.

Qualifications and Experience

  • Minimum 02 years of experience as a Chief Steward, with a total of 05–08 years of relevant experience in stewarding operations.
  • Prior supervisory or senior stewarding experience is essential.
  • Proficient in computer applications, including Microsoft Office (Excel and Word), with strong ability to manage reports, records, and operational documentation.
  • Sound knowledge of proper chemical handling procedures and safe usage of cleaning materials in line with hotel policies and procedures.
  • Strong interpersonal and communication skills, with the ability to prioritize tasks, solve problems efficiently, and manage multiple responsibilities in a fast-paced environment.
  • Thorough understanding of health, safety, and hygiene regulations, including HACCP standards, with strict adherence to company policies, brand standards, and local compliance requirements.
