SOUS CHEF
Location: The Bungalow & The Archives – Galle Fort
Contract: Full-time

At The Archives, we don’t just serve food—we deliver refined, memory-making experiences in one of Sri Lanka’s most iconic heritage settings. We’re looking for a seasoned Sous Chef to help lead our kitchen with precision, discipline, and quiet confidence.
This is a leadership position reporting directly to our Group Executive Chefs and ownership. You’ll be trusted with driving execution, upholding systems, and maintaining the elevated standards that define us.
What You’ll Be Responsible For
- Overseeing daily kitchen operations alongside the Group Executive Chef
- Leading and motivating the brigade with discipline, calm, and clarity
- Upholding consistency in food quality, presentation, and portioning
- Monitoring prep systems, inventory, wastage, and cleanliness
- Assisting with new dish execution, specials, and menu transitions
- Communicating operational feedback directly to ownership
Who You Need to Be
- Minimum 7 years of kitchen experience, with at least 2 years as a Sous Chef
- Overseas experience is essential—Europe, Middle East, or Asia preferred
- Strong foundation in European, Southeast Asian, or contemporary fusion cuisines
- Calm under pressure, highly organized, and systems-oriented
- Ability to lead respectfully—no ego, no chaos
- Professional, fluent in English, and passionate about quality
