EXPERIENCED PASTRY CHEF

Location: The Bungalow & The Archives – Galle Fort

Contract: Full-time

We are seeking a skilled and innovative Pastry Chef to join our culinary team and elevate the dessert experience across The Bungalow and The Archives—two of Galle Fort's most renowned dining destinations.

This role is ideal for a culinary professional who thrives in boutique, high-standards environments and has a true passion for plated desserts, precision, and presentation.

Minimum Requirements

  • Minimum 5 years of full-time experience in professional pastry kitchens
  • Proven ability to execute refined plated desserts for à la carte service
  • Strong knowledge of classic pastry fundamentals (e.g. pâte à choux, tempering, entremets, sauces, sorbets, etc.)
  • Experience in menu planning, costing, and inventory control
  • Clear understanding of food safety and hygiene standards
  • Highly organized, clean, and consistent in execution
  • Ability to work under pressure and manage multiple dessert orders simultaneously
  • Comfortable working in a collaborative team environment

Added Advantages

  • Previous experience in luxury boutique hotels, upscale restaurants, or international kitchens
  • Knowledge of modern techniques and evolving global trends in desserts
  • Experience with high-volume service during peak periods
  • A keen eye for elegant, Instagram-worthy plating
  • Familiarity with local ingredients and tropical flavour pairings is a bonus
