Job Role and Responsibilities:
- Develop and update food safety and hygiene procedures, aligned with local regulations and international standards (HACCP, ISO 22000).
- Collaborate with restaurant managers to ensure policy integration across all branches.
- Lead regular training sessions and workshops on hygiene and food safety for new and existing employees.
- Demonstrate best practices in food handling, cleaning, and sanitation.
- Conduct regular internal audits and inspections of kitchens, storage, and service areas across all our outlets, including Ministry of Crab, Nihonbashi by Dharshan, and The Tuna & The Crab.
- Ensure timely corrective actions on non-compliance issues and maintain readiness for external audits.
- Monitor licensing and facilitate compliance with all health and safety regulations.
- Coordinate staff medical tests, including stool sample testing, for food handler certifications.
- Investigate food safety concerns or complaints and implement necessary corrective actions.
- Maintain clear documentation of incidents and ensure transparent reporting to management.
- Supervise cleanliness of utensils, surfaces, and kitchen tools across all sites.
- Oversee waste management and pest control operations.
- Monitor hygiene practices of third-party vendors quarterly and annually.
- Maintain comprehensive records on staff training, inspections, audits, and hygiene-related incidents.
- Provide regular updates to senior leadership on food safety status across all restaurants.
Qualifications And Competencies Required:
- Bachelor’s degree in Food Science, Microbiology, Environmental Health, or at minimum, a Higher National Diploma in Food Hygiene, Health and Safety, or a related discipline.
- Minimum of 5 years’ experience in food safety and hygiene roles within the hospitality or foodservice industry.
- Certification in HACCP, ISO 22000, or equivalent food safety management systems.
