SOUS CHEF IN ROOM DINING

We have an exciting opportunity for a Sous Chef, In Room Dining to join Cinnamon Life City of Dreams, part of Cinnamon Hotels & Resorts, Sri Lanka’s largest hotel owner with a portfolio of 17 hotels and resorts in Sri Lanka and the Maldives. It is a member of John Keells Holdings PLC, one of the largest listed conglomerates in Sri Lanka.

Key Responsibilities

  • Assist in managing the daily operations of the In-Room Dining kitchen, ensuring timely and high-quality food delivery.
  • Maintain exceptional food quality, portion control, and presentation standards at all times.
  • Support menu execution, recipe compliance, and mise en place planning.
  • Supervise, train, and motivate kitchen colleagues to ensure operational excellence.
  • Ensure strict adherence to food safety, hygiene, and HACCP standards.
  • Control food costs, minimize wastage, and assist in inventory management.
  • Coordinate closely with service teams to ensure smooth and efficient service flow.

Knowledge and Skills

  • Diploma or certification in Culinary Arts or equivalent.
  • Minimum 3-5 years’ experience in a similar role within a luxury hotel or high-end restaurant.
  • Strong knowledge of international cuisine and In-Room Dining operations.
  • Proven leadership, organizational, and time-management skills.
  • Ability to work flexible shifts, including nights and weekends.
  • Strong commitment to quality, hygiene, and guest satisfaction.
